Vegan Creme Brulee is something I have been wanting to make for ages! I went out and bought a chef type ‘blow torch’ to add to all the other kitchen gadgets we already have.
But I think I will use it quite a bit. Apparently one can also use it to skin tomatoes and peppers, but I’ve yet to try that.

For the creme itself, I hunted around on the internet and eventually came up with my own version, which probably incorporates some of all their ideas.
I particularly wanted to avoid using more nuts as they’re in many of our other desserts.

We served this up at our latest Green & Vegan pop-up dinner, and it was a hit!
For this particular one, I gave it a hint of grapefruit by adding about 3 drops of foodgrade grapfruit concentrate.

So –

Ingredients:

1 block silken tofu
1 C soy milk
1/3 C brown sugar
1 1/2 T egg replacer (or cornstarch)
1 T maple syrup
pinch kala namak (Indian black salt)
1/2 t vanilla extract

(C=Cup, T=Tablespoon, t=teaspoon)

Plus extra brown sugar for the ‘brulee’ bit.

What to do:

1 – Blend all the ingredients, EXCEPT the vanilla, in a high speed blender for at least 30 seconds.
2 – Pour the mixture into a pot.
3 – Stirring continuaously, bring it slowly to the boil. It must JUST come to the boil.
4 – Stir in the vanilla right at the end.
4 – Pour into ramekins.
5 – Allow to cool and then refrigerate.
6 – Take out of the fridge about 20 mins before serving.
7 – Sprinkle about 1 heaped teaspoon of sugar over the top of each ramekin. Shake gently or tap on counter to get the sugar as level as possible.
8 – Using your chef blowtorch, caramelize the sugar topping.
9 – Serve within 10 minutes.

Notes:

1 – We try to use organic ingredients as far as possible, or at least NON GMO ones.
2 – Kala Namak is salt from a sulphurous rock, which brings a slight ‘eggy’ taste to the mixture.
3 – You must add the vanilla last thing. If you add it before heating the flavour tends to evaporate away.
4 – If you want to add the grapefruit or say orange flavour, add that concentrate in also right at the end, with the vanilla. But go easy with these concentrates, as they are very strong.
5 – Follow the instructions properly for your blowtorch, to ensure you operate it safely!
