Tofu, butternut and red cabbage stir fry

Serves 4

Ingredients

  • 1 block smoked tofu diced into 1.5 cm cubes
  • 1 medium butternut squash - peeled and cubed into 1 to 1.5 cm blocks
  • 1 small/medium red cabbage - shredded into thin strips
  • 1 onion - finely chopped
  • 2 cloves garlic - finely chopped
  • Canola oil
  • Soy sauce
  • Sherry
  • Black Pepper
  • Sea salt
  • Handful fresh coriander

Cooking Method

  1. Steam or microwave the butternut cubes until just starting to get slightly soft
  2. Mix about 1/4 cup soy sauce, 1/4 cup sherry, some black pepper and a dash of water in a bowl
  3. Heat the oil in a wok
  4. Add the chopped onion and cook for a few minutes until soft
  5. Add the garlic and cook a few minutes more
  6. Add the butternut cubes and stir fry, turning frequently with a large spatula
  7. Pour in about half the soy/sherry mixture and continue stir frying
  8. Add the cabbage, and when it is wilted down
  9. Add the tofu cubes
  10. Continue stir frying, adding more of the soy/sherry mixture as it cooks away
  11. You want the veg to be cooked but not too soft and turned to a stew!
  12. When cooked but al dente, stir in some ground sea salt and black pepper and the fresh coriander
  13. Serve right away
