Ricotta Rissoles

Riccota Rissoles

Serves 4 (makes about 12 rissoles)

Ingredients:

  • 600 grams ricotta cheese
  • zest of 1 lemon
  • 2 red or green chillies, deseeded and finely choppped
  • 3 tablespoons chopped fresh oreganum leaves
  • large cup grated parmesan cheese
  • sea salt and fresh ground black pepper
  • 2 eggs, beaten
  • 100 mls oat flour

Cooking method:

  1. Crumble the ricotta into a large bowl
  2. Mix in the lemon zest, chopped chillis and oreganum leaves
  3. Fold in the grated parmesan
  4. Season with sea salt and black pepper
  5. Add in the beaten aggs and oat flour to bind the mixture
  6. Shape into rissoles
  7. Bake on a baking tray at 200 dec C for about 30 mins, tirning once, until cooked through and browned
  8. Serve hot with vegetables, or cold with salads (as in the picture)
