Red Cabbage with Mustard

Red Cabbage with Mustard - Lal Kobichi Bhaji

Serves 4

Ingredients:

  • 2 tablespoons sunflower oil
  • 1 teaspoon black mustard seeds
  • 1/2 teaspoon cumin seeds
  • large pinch asafoetida
  • 2 green chillies, slit down middle, seeds removed and stalk left intact
  • 300g red cabbage, finely chopped
  • salt to taste
  • 1 tablespoon lemon juice
  • 3 tablespoons desiccated coconut

Cooking method:

  1. Heat the oil in a heavy-based saucepan over a high heat and add the mudtard seeds. As they pop, add the cumin seeds and asafoetida, and stir in the chillies.
  2. Add the red cabbage and salt. Pour in 3-4 tablespoons of water and bring to boil. Reduce heat, cover and cook for about 10 minutes until the cabbage is tender
  3. Remove from heat and stir in the lemon juice and coconut

The recipe is from "healthy Indian in minutes" by Monish Bharadwaj

This is a great book and you can buy it here:

Notes:

  1. The original recipe used asafoetada. I did not use this as we could not find any.
