Mutter Paneer

Mutter Paneer - Peas with Cottage Cheese

Serves 4

Ingredients:

  • 2 medium onions roughly chopped
  • 2 tablespoons sunflower oil
  • 2 teaspoons ginger-garlic paste
  • 2 tablespoons tomato paste
  • salt to taste
  • 1/2 teaspoon chilli powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 300g frozen peas
  • 150g paneer cut into 2.5cm cubes

Cooking method:

  1. Place onions in a small saucepan, just covered with water. Bring to boil, reduce heat and simmer until soft and translucent. Transfer along with the cooking liquid to a blender and blitz to a smooth paste.
  2. Heat the oil in a heavy-based saucepan and fry the ginger-garlic paste for 1 minute over a high heat.
  3. Spoon in the onion paste from the blender and cook for 2 - 3 minutes, stirring. Add the tomato puree, salt and spices.
  4. Add the peas and about 100ml boiling water. Bring to the boil, reduce heat and simmer for 5 minutes.
  5. Scatter the paneer cubes over the top and simmer for 1 minute to soften them.

Notes:

  1. Paneer should be available for your local Indian grocer or spice shop.
  2. Instead of ginger-garlic paste, I used fresh garlic and ginger very finely chopped.
  3. I prefer to stir the paneer cubes into the mix and cook a little longer so that they can soak up the flavour. Paneer is a good source of protein but is somewhat bland.
