Cauliflower Rice

Cauliflower Rice

4 Servings

Ingredients:

  • 1 medium sized cauliflower
  • 1 large onion
  • 2 cloves garlic
  • Olive oil
  • Fresh ground black pepper
  • 3 or 4 eggs (for an egg-fried rice option)

Preparation:

  1. Put the cauliflower florets in a food processor and run for about 45 seconds till a rice-like texture
  2. Finely chop the onion and garlic
  3. Beat the eggs in a bowl (if making egg-fried rice)

Cooking:

  1. Heat the oil in a large frying pan
  2. Fry the onion and garlic lightly till softened, but not browned
  3. Stir in the cauliflower and heat through well, stir-frying continually. Only about 5 minutes
  4. Season with a little salt and fresh ground black pepper
  5. For the egg-fried rice option, now stir in the beaten eggs and stir-fry for a minute or so more
  6. Serve as an accompaniment to curries, stews or stir-fries
