Carrot and Cashew Salad with Honey

Gajar ka Salaad - Carrot and Cashew Salad with Honey

Serves 4

Ingredients:

  • 1 teaspoon sunflower oil
  • 1/2 teaspoon black mustard seeds
  • 1/4 teaspoon cumin seeds
  • 4 large carrots, washed and grated
  • 2 tablespoons unsalted cashew nuts
  • salt to taste
  • small handful fresh coriander leaves, washed
  • 1 teaspoon runny honey

Cooking method:

  1. Heat the oil in a small saucepan over medium heat. Add the mustard seeds and allow them to pop. Stir in the cumin seeds and turn off the heat.
  2. Combine the grated carrots and cashew nuts in a serving bowl. Drizzle the hot oil and seeds over abd mix well.
  3. Season to taste with the salt.
  4. Stir in the fresh coriander and honey.
