Andhra Carrot Curry

Andhra Carrot Curry

Serves 4

Ingredients:

  • 8 to 9 medium carrots - washed and sliced into small roundels
  • 2 tablespoons canola or grapeseed oil
  • 1 onion - sliced
  • 3 cloves garlic - finely chopped
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon chilli powder
  • 1 teaspoon turmeric
  • salt to taste

Cooking method:

  1. Heat the oil in a saucepan and saute the garlic for about 15 to 20 seconds
  2. Add the cumin seeds and mustard seed and continue to saute until the mustard seeds start to pop
  3. Add the onions and continue to saute for about 5 minutes
  4. Add the carrots, salt, chilli powder, turmeric - stir well and cook over a low heat for about 10 minutes till the carrots are soft

Notes:

  1. This is our version of a similar recipe I found on the web, but it had far too many ingredients and was far too complicated
  2. Serve this dish as a vegetable accompaniment to any meal
