Chocolate Brownies – Raw and Vegan

Any regular reader will probably know I am rather fond of the tasty raw tarts and cheezecakes that can be made.
Chocolate Brownies are another delicious dessert that can be raw and vegan.
Karen and I have tried a few other recipes, but this one from Noel and Natalie’s Easy Living Food recipe book is definitely the best.
They even went so far as to call them the ‘ultimate’ chocolate brownies, and I think they are right.
In their recipe they use honey, but to make it vegan I used agave nectar instead.
I also used a bit less of the raw cacao powder then them.

Ingredients:

2 C brazil nuts
1 1/2 C raw cacao powder
1 C coconut flakes
3/4 C agave nectar
3/4 C water
1 T vanilla powder
1/4 t salt

Method:

Put coconut flakes into a high speed blender and whizz to a fine flour. Set aside.
Blend the nuts and water to a smooth paste.
Put all ingredients into a food processor and process till smooth. Start off with a little less of the water, and then add as necessary to get the right consistency.
Spread the mixture out onto solid dehydrater sheets, about 15 mm thick.
Dry for about 6 hours, then cut into squares and dehydrate for another 18 or so hours.
Turn over onto the mesh sheets and continue drying till they are as dry as you would like them, maybe another 18 to 24 hours.

This mixture makes 1 tray of brownies as in photo above.
And of course, thanks to Noel and Natalie for that amazing recipe book – Easy Living Food. Not only are the recipes tasty, but every single one I have tried actually works!
